I cannot pretent to know much about Windows Server. In fact what I know you could write on Jude Law's willy, but this stuff was in todays key note so sit back and enjoy the ride:
R2 is the next release containing .net framework 2.0.
It will have much better support for SAN's along with better interop to Oracle and UNix systems and others.
MMC 3.0 will have the ability to write managed add-ins....yipeee
It will also have the SDM modeller (prob the team system one) in it for deployment modelling.....great if you are working In-House
In 2006 there will be a new server compute cluster aimed at clustering large amounts of servers together for the scientific community(serious geeks). You will be able to submit jobs and let them get on with it. Jobs can be designed in Visual Studio.
Monad will be the new scripting language based on .NET cool but also slightly worrying do we really want all those server goons writing, god knows what .
Some enhancements to security that I cannot pretend to understand fully so I cannot explain.....but it sounded good.
Longhorn server 2007. Will have transacted file operations which roll back if a multi copy fails.
New event logging facility will mean more information can be stored in the log.
IIS 7 the new web server uses a web config to configure it's security rather than the convuluted system at the moment. Now that is cool.
You can configure which modules to load on your site which is cool also because if you don't want certain functionality such as DirectoryListing you can remove it from the config file and it won't load. Also you don't need to stop and start the server. Add to this that you can write your own modules so you could replace the standard directory listing to, as they demoed, display a photo album style page.
Needless to say everything is being done with a mind to 64bit and 32bit will be considered legacy....ahh isn't progress sweet.
